I am going to get some new rims for my paddles. They are 21x12 and I think they are mounted on 8x9 rims and i want something narrower what would be better 8x8 or 8x7?

21's id say a 8x7

Either is fine I like the 7s. On a 22" tire I had to use 7s to get the tire to hook

I ended up getting 8x7 drag cut. Should be better that the 8x9 that I had
